IT SEEMS SO ODD TO BE WRITING A POST ABOUT MY FAVORITE CHRISTMAS COOKIE ON THE 4TH OF JULY, BUT YOU CAN'T BE TOO PREPARED WHEN YOU ARE DOING HANDMADE CHRISTMAS.
WHEN THE KID WAS GOING TO PAUL SMITHS' COLLEGE, HE CAME HOME MOST WEEKENDS BECAUSE HE VOLUNTEERED WITH THE LOCAL RESCUE SQUAD.
I MUST SAY I WAS HAPPY, I MISSED HIM SO MUCH IT WAS CRAZY.
ANYWAY, HE ALWAYS CAME HOME WITH THE BAKING LIST...AND IT WAS BIGGER EVERY WEEK.
I MADE TASSIES THANKSGIVING WEEKEND AND WAS FREEZING THEM SO I WOULD HAVE THEM ALL READY FOR CHRISTMAS, AND SENT SOME BACK WITH THE KID.
APPARENTLY HE WAS THE MOST POPULAR KID ON THE FLOOR FOR THE REST OF THE SEMESTER AND I WAS MAKING TASSIES UNTIL CHRISTMAS BREAK.
DOES EVERYONE KNOW WHAT A TASSIE IS?
IT IS FOR LACK OF A BETTER DESCRIPTION, A BITE SIZE PECAN PIE!!
OH YEAH BABY!!
NOW FOR THE RECIPE:
THIS IS FOR YOUR CRUST
1/2 BRICK CREAM CHEESE, 1 STICK BUTTER, 1C. FLOUR
MIX THOROUGHLY UNTIL YOU HAVE A COMPLETELY WHITE BALL
EVEN THOUGH THIS HAS A LOT OF BUTTER, DO YOURSELF A FAVOR AND WELL GREASE A MINI MUFFIN PAN, YOU DON'T WANT TO FIGHT TO GET THESE OUT OF THE PAN.
ROLL DOUGH INTO 1 INCH BALLS AND PRESS INTO PAN
NOW FOR THE FILLING
2 TBSP MELTED BUTTER, 1 C. BROWN SUGAR, 2 EGGS, 1/2C. CHOPPED PECANS
FILL EACH LITTLE SHELL WITH CHOPPED PECANS, MIX THE REMAINING INGREDIENTS AND COVER PECANS
BAKE AT 325 DEGREES FOR 35 MINUTES.

I just made some of these yesterday - they are divine and one of my most favorite treats - I love that they're mini too. I drizzled caramel syrup over mine...makes a great presentation.
