WELL IT STARTED WHEN THE KID MOVED HOME (I COULDN'T BE HAPPIER, HE COULD STAY FOREVER, HAVE 3 MORE GENERATIONS AND I'D BE GREAT WITH THAT)
WE HAVE HAD 2 DEATHS, 2 CANCER SCARES,
A CONCERT IN MASSACHUSETTS,
1 WEDDING THAT WAS CALLED OFF 2 DAYS BEFORE, 2 SURGERIES, EMPLOYMENT ISSUES AND THEN THE NORMAL DAILY LIFE WE ALL HAVE...
I ACTUALLY LOVE THAT MY LIFE IS NEVER, AND I DO MEAN NEVER BORING, BUT I AM READY TO TAKE A BREATH AGAIN
.
I HAVE HAD A FEW DRS. APPOINTMENTS IN THIS TIME, MY DOCTOR IS NEVER ON TIME, BUT SOOOOOO WORTH THE WAIT. I BRING BOOKS TO READ, LATELY I HAVE BOUGHT SOME VERY NICE COOKBOOKS, SO IN DAYS TO COME I WILL BE SHARING SOME RECIPES I'VE TRIED SO FAR.
THIS RECIPE IS VERY SIMPLE, I PROMISE!!!
USE REFRIGERATED SUGAR COOKIE DOUGH FOR THE CRUST, PRESSING IT INTO A TART PAN, BAKE UNTIL GOLDEN AT 350 DEGREES.
WHILE THAT IS BAKING TEMPER WHITE CHOCOLATE AND SET ASIDE, WHEN THE TART SHELL IS FINISHED BAKING YOU WILL COAT IT WITH THE WHITE CHOCOLATE.(THIS ALLOWS YOU TO STORE ANY UNEATEN PORTION WITHOUT THE CRUST BECOMING SOGGY, YOU CAN ALSO USE CHOCOLATE, BUT MY MOM DOESN'T DO FRUIT WITH REGULAR CHOCOLATE, BUT LIKES THE WHITE CHOCOLATE)
IN A MIXER, CREAM A BRICK (8OZ) CREAM CHEESE WITH 1 BOX OF VANILLA INSTANT PUDDING AND 1 C. OF MILK (VANILLA SILK WORKS WELL FOR THIS RECIPE FOR THOSE OF YOU WHO HAVE DAIRY ISSUES OR JUST PREFER THAT)
WHEN THE SHELL IS COOL AND COATED FILL WITH CREAM CHEESE MIX AND TOP WITH YOUR FAVORITE FRUIT, RIGHT NOW THE STRAWBERRIES ARE BEAUTIFUL IN MY AREA SO THOSE WITH KIWI AND BLUEBERRIES ARE WHAT WE HAVE BEEN HAVING.
